PARMIGIANO'S HISTORY

….just like other famous things , Parmigiano Reggiano cheese has been a conversation piece for ages. Eighteenth century literature traces the origins of this cheese back to the origins of man. But the earliest literary source which records its gastronomic importance and value is Boccaccio's Decamenron. The origin of Parmigiano Reggiano of course goes further back into history than 12th and 13th century literature . The area in which it is produced is still the same, bordered by the same rivers and mountain ranges: the rites are still the same, the quality is constant. Why have people continued to trust this product? Surely not for economic or culinary reasons alone. The history of Parmigiano Reggiano is soaked in a passion which is handed down from generation to generation, kept alive by a sense of pride which comes belonging to an élite: the aristocracy of those who produce the most prestigious cheese in the world.
