But the earliest literary source which records its gastronomic importance and value is Boccaccio's Decamenron. The origin of Parmigiano Reggiano of course goes further back into history than 12th and 13th century literature . The area in which it is produced is still the same, bordered by the same rivers and mountain ranges: the rites are still the same, the quality is constant. Why have people continued to trust this product? Surely not for economic or culinary reasons alone.
